Ingredients
For Marinade:
Chicken - 1 Kg
Juice Of a lemon
Curd - 2 Tbsp
Salt - 1 Tsp
Chilli Powder - 1 Tsp
Turmeric Powder - 1/4 Tsp
Ginger Garlic Paste - 1 Tsp
For Masala Paste
Byadagi Chilli - 8
Coriander Seeds - 2 Tbsp
Cumin Seeds - 1 Tsp
Fennel Seeds - 1 Tsp
Peppercorns - 1 Tsp
Fenugreek Seeds(a few)
Garlic - 6 Cloves
Tamarind Pulp(soaked)
For Chicken Ghee Roast:
Ghee
Marinated Chicken
Masala Paste
Water
Jaggery - 2 Tsp
Salt - 1 Tsp
Curry Leaves
How to make:
To marinate the chicken.
1. Take 1 kg chicken in a bowl, add lemon juice, curd, chilli powder, salt, turmeric powder, ginger garlic paste to the chicken.
2. Rub the chicken pieces with the ingredients and let it sit for an hour.
To make masala paste
3. To a pan, add Byadagi chilli, coriander seeds, cumin seeds, fennel seeds, peppercorns, fenugreek seeds.
4. Dry roast them until you spread the aroma and let them cool for a while.
5. Transfer the ingredients to a mixer jar, add garlic, soaked tamarind and little water and grind well.
To make Ghee Roast
6. To a large pan, add ghee, and marinated chicken pieces. Cook it for 15 mins in high flame.
7. After 15 mins, remove the chicken pieces and keep it aside.
8. Once the sauce reduces, add the masala paste and little water.
9. Cook the masala for 10 mins.
10. Add some more ghee and continue to cook for 5 more minutes.
11. Once the ghee starts separating, add jaggery and the slightly cooked chicken pieces.
12. Add salt and cook until the masala gets thickened.
13. Finally add some fresh curry leaves.
14. Chicken Ghee Roast is ready to be served.
