CHOCOLATE AMARETTI CAKE
Chocolate Amaretti Cake
Ingredients
2 teaspoon grated orange peel
4 eggs
cocoa powder[topping]
130g sugar
100g unsalted butter
120g dark chocolate
150g chopped almonds
60g amaretti cookies
cooking spray
Method
1) Preheat the oven to 175°C.
2) Spray a 23-cm spring form pan with non-stick spray.
Heat the chocolate until melted and smooth
by stirring it every 20
Seconds, for about 1 minute.
3) Combine the almonds and cookies in processor. Pulse until the
almonds and cookies are finely ground.
Transfer the nut cookie mixture to a bowl. Add the butter and sugar to the
processor and blend
until creamy . Add the grated orange peel
and pulse
briefly. Add the eggs 1 at a time. Blend
until the
eggs are incorporated. And blend
again. Add the nut mixture and melted
chocolate. Pulse until blended.
Clean the sides of the bowl. Blend again.
4) Pour the batter into the prepared pan. Bake for 35 minutes
until the center puffs and a Skewer inserted into the center of the cake comes
out clean. Cool the cake in the pan for 20 minutes.
5) Transfer the cake to a
plate. Sift the cocoa powder over and serve.
